~~ Kiwi Yoghurt And Cheese Jelly Moom cakes ~~ 奇异果乳酸&芝士燕菜椰奶


~~~   就是喜欢用水果乳酸饮品,来作为燕菜月饼的主要材料。
            今天采用奇异果乳酸饮,品喜欢它的清澈玉绿色,味道和口感。。。
            令人看了很心怡,而且也吃得健康,没用到化学色素(⊙o⊙)哦 !

                   奇异果乳酸 & 芝士燕菜月饼  
食谱 :-
蛋黄材料 : - (A)
燕菜粉 - 1 tsp
jelly粉 - 1/2 tsp
幼糖 - 50g
清水 - 200 ml
盐 - 一点
红萝卜 -100g ( 切块后蒸熟,打成泥 )


馅料 :(B)
燕菜粉 - 2 tsp
jelly粉 - 1 tsp
幼糖 - 50g
清水 - 250ml
芝士- 40g  ( cream cheese )
柠檬汁 - 2 tsp
鲜奶油 - 100 g ( whipping cream )

皮料 : (C)
燕菜粉 - 1 tbsp
jelly 粉 - 1 tsp
幼糖 - 100g
奇异果乳酸饮品 - 500 ml  ( kiwi yoghurt drink )
奇异果filling -  100g 

做法 :
1) 材料 (A) 倒入锅里煮滚,熄火过滤后,倒入蛋黄模里,待凝固扣出,备用。
2) 馅料 (B) 除了鲜奶油,全部倒入锅里煮滚,熄火加入鲜奶油,拌匀过滤。
3) 将少许 (2) 倒入小杯子里,稍凝固后,置入一粒 (1) 的蛋黄,再倒入(2)至盖满
       蛋黄,待凝固冷却后,取出待用。
4) 皮料(C ) 倒入锅里煮滚,搅至奇异果酱熔化,熄火。
5) 将少许(4)的草莓皮料倒入模里,稍凝固后置入(3),再倒入(4)填满模。
6) 待 (5)凝固,放入冰箱冷藏。

Kiwi Yogurt and Cheese Jelly Mooncake
Ingredients
Egg Yolk (A):

- Agar Agar powder – 1 tsp
- Jelly powder – ½ tsp
- Fine sugar – 50 g
- Water – 200 ml
- A pinch of salt
- Carrot – 100g (Cut into small pieces, steam then mash into paste)

Filling (B)
- Agar Agar powder – 2 tsp
- Jelly powder –1 tsp
- Fine sugar – 50 g
- Water – 250 ml
- Cream cheese – 40 g
- Lemon juice – 2 tsp
- Whipping cream – 100 g

Skin (C)
- Agar Agar powder – 1 Tbsp
- Jelly powder –1 tsp
- Fine sugar – 100 g
- Kiwi yogurt drink – 500 ml
- Kiwi filling – 100 g

Method:
1. Pour ingredient (A) into pot and bring to boil. Sieve the mixture and pour into egg yolk mould. Remove  after yolk has hardened. Set aside.
2. Other than whipping cream, pour ingredient (B) into pot and bring to boil. Add whipping cream after fire is turned off. Stir well then sieve the mixture.
3. Pour a bit of (2) into small cup. When the jelly is slightly set, add a yolk from (1). Then top up with (2) to cover the yolk. Wait till jelly is cooled and hardened before removing from cup. Set aside.
4. Pour ingredient (C) into pot and bring to boil. Stir until kiwi filling is dissolved.
5. Pour some jelly from (4) into mooncake mould. When the jelly is slightly set, put in (3). Then fill up with (4) till full.
6. Wait till jelly is set then put into fridge to chill.

jelly粉和燕菜粉有什么分别?可以直接用完jelly粉或燕菜粉吗?

早安!^^请问燕菜粉和jelly粉的比例是多少呢?因为我的食谱里只有用燕菜粉没有参两者,所以想自己调配一下。如果食谱里写用1茶匙燕菜粉需加入多少得jelly粉呢?谢谢你,麻烦你了。
