芋头千层蛋糕

食谱:
戚风蛋糕  (切成三片 )

材料:
蛋白- 4 粒
幼糖- 40g
tartar 粉- 1/4 tsp

蛋黄- 4 粒
幼糖-  40g
玉粟薯油(corn oil )- 40ml
淡奶- 50ml
特幼面粉- 110g

基本企风蛋糕做法
7寸摸盘
150*C  烘 50分钟

芋头层 ( Yam layer )
芋头泥 -  400g  (蒸熟,用blender 磨烂)
椰浆 - 300 ml
清水 - 700 ml
糖 -  160 g
燕菜粉- 10g
Hoe Kwe 粉(禄豆粉)- 100g (1 包)

简单做法:

1)椰浆加清水 = 1000 ml,取出300 ml 加入禄豆粉拌匀,备用。
2)将余剩的700 ml ,加入糖,燕菜粉和芋头泥,一起煮滚。
3)转小火,加入禄豆粉浆,煮至农稠,熄火即可。
4)先倒下一层kaya,铺上一片蛋糕,交叉铺下至完。
5)最上一层的一定要是蛋糕,用一个小碗压著(预防浮起来)。
6)待冷,放入冰箱,冷冻最少四个小时或隔夜。
7)取出,切片,即可食用。

Yam Layer Cake 
Recipe:Chiffon Cake (Cut into 3 layers):

 4 egg white 
40g castor sugar
1/4 tsp tartar powder

4 egg yolk
                                                                          40g sugar
40ml corn oil
50ml evaporated milk
 110g suoerfine flour 

Follow the usual chiffon cake method.
 This is for 7 inch cake pan, baked at 150 degree for 50 min.

Yam Layer
400g yam puree (steamed till cooked & use blender to make puree)
300ml coconut milk
700ml water
160g sugar
10g agar agar powder
100g mung bean flour ( HOE KWE )

Method:
1) Mix water and coconut milk together (total 1000ml) and pour out 300ml to mix with mung bean flour, set aside
2) For the remaining 700ml, add sugar, agar agar powder and yam puree, then bring it to boil
3) Lower the heat to low fire, add in the mung bean batter and cook till thick and off fire.
4) Pour a layer of the yam kaya first, then place a layer of cake, alternative a layer of kaya and cake till finish
.5) The top layer must be the cake, use a small bowl to press it down (to prevent it from floating up6) Wait for it to cool and put into the fridge and let it set for 4 hours or overnig
